But anyways, this is a brewery, a podcast recorded at a brewery that is owned by two scientists.

So when that happens, you produce data.

Yeah, a lot of data.

So probably far too much data, probably overthinking a lot of the operations and finances that occur at the brewery.

So in this episode, what we want to do is let them go nuts and.

Go through some of the interesting data points they got by looking at all the sales and every, all the other data that comes through this brewery.

Which is the way that you need to have a discussion around data because most people, their eyes glaze over completely.

Speaker:

I when you start talking about data, but we've actually learned a lot about how to run our company through looking at data.

Speaker:

So first of all one of the things is every time you come into Mc Mann's and you buy a beer from one of our amazing staff they'll push the little buttons on the, what we call the POS, the point of sale.

Speaker:

But what's lovely also

Speaker:

people, POS, they actually Yep, mm-hmm.

Speaker:

Aptly named, but it tracks who's bo or it, not who, but it, it tracks what you're buying.

Speaker:

Not linked to you, but we wanna know what's selling well.

Speaker:

The, one of the ways that we communicate with the community about what beer is to brew is basically you vote with your dollar.

Speaker:

So if you're buying a particular beer that really speaks to you, that you like, that you love, whatever, we see that in our numbers.

Speaker:

So every week, I kid you not Bobby will send a plot of the top contenders and it's not just a plot of we can't just look at any particular day.

Speaker:

So figuring out which bill beer sells best.

Speaker:

Taking into account which beer has been on for what number of days.

Speaker:

So if a beer is on tap for only two days, you can't compare that to a beer that's been on tap for say 12 days.

Speaker:

Like

tall mass.

Speaker:

Like tall mass was on vacation, right?

Speaker:

Speaker:

was on vacation.

Speaker:

And so how do you, what we would say in science is normalize or how do you like take into account?

Speaker:

Okay.

Speaker:

We have to take into account how many days it's been on tap.

Speaker:

So if it's a one day beer.

Speaker:

And it sells out.

Speaker:

It was the hottest seller that day.

Speaker:

Well, it was only on tap for one day.

Speaker:

So was it really compete with, say, pirates code?

Speaker:

That's on all the time, Bobby, take it away.

Speaker:

Right.

Speaker:

Um, first of all, I was gonna say a couple years ago, right after COVID, we were.

Speaker:

Trying to figure out how many beers the, Inner Circle drinks.

Speaker:

Mm. And our, our inner circle, our pub club, we called 'em the Pub club.

Speaker:

Yeah.

Speaker:

And for a while we weren't keeping track of that.

Speaker:

That's true.

Speaker:

We had a

Speaker:

button on the po s that just said Pub Club.

Speaker:

So if you were a Pub Club member, you said, Hey, I'm a Pub Club member.

Speaker:

It just said pub Club.

Speaker:

We had no idea what you were drinking, we just knew that you were drinking, which was great.

Speaker:

'cause we learned a lot about how much.

Speaker:

We love our pub club.

Speaker:

So, so when, I mean we already love you all when,

Speaker:

when we opened this place, we, wanted to recreate the experience you find in Ireland or England and we thought, wouldn't it be awesome if we had people that all but slept here?

Speaker:

And at this point we have people that come here, 100 I. 200, 2 53, 200 there even.

Speaker:

There are even 300 pub clubbers.

Speaker:

I rely days, days per year, rely on the stars.

Speaker:

We could do an entire episode on

Speaker:

our pub clubbers.

Speaker:

They, there's an inner circle of the pub clubbers who they, they give us more insight and intel into what our company should like, which direction our company should go.

Speaker:

And so we value opinion so much.

Speaker:

Two things we learned, well first was why, why are we doing this?

Speaker:

'cause we're losing information.

Speaker:

'cause we said just anything, the order, just push that button.

Speaker:

We, we were losing information.

Speaker:

The reason I didn't care is because our pub club loves everything we make.

Speaker:

It almost like, you know, they're their own children, right?

Speaker:

They, they just love everything.

Speaker:

They wanna try everything no matter how ugly they are.

Speaker:

And, and so we wanted

Speaker:

to get data on how much percentage of our sales actually was, we're we're

Speaker:

sold to the regular people rights, not the regular, as opposed to people that

Speaker:

just came in once a week.

Speaker:

Yeah, once a month.

Speaker:

Once a year.

Speaker:

Yeah.

Speaker:

Yeah.

Speaker:

And secondly, we learned that they give us a lot of money.

Speaker:

per year.

Speaker:

A lot, lot.

Speaker:

They're 25 to 30% of our, our revenue.

Speaker:

And I, I didn't mean to go take the, the conversation there, but our pop club is like, if you're gonna build a business, build it around.

Speaker:

That kind of patronage.

Speaker:

At least that's the way I thought about it.

Speaker:

Yeah.

Speaker:

They're also

Speaker:

60 to 70% of our looks.

Speaker:

That's a handsome group of people.

Speaker:

Oh my God.

Speaker:

They, I mean, it's unbelievable.

Speaker:

And I think, what is it?

So when they get a, in the pub club, if you get a visit of, if you hit your 200th visit, now it's a gift from me and Bobby personally.

My kid and I have had so much fun.

We just go to Etsy and we like look up the coolest thing and now it's like, I I I can't It's

Let, so let me ask you about the, this, this pub club, because this does not surprise me.

Speaker:

So what does this mean in terms of what you're thinking, in terms of, it seems that you would have a very strong incentive to get people to become pub clubbers.

Speaker:

Yes.

Speaker:

That.

Speaker:

And you're not really pushing it that hard.

Speaker:

This is the time, but I think there's of show, but think there's also a bit

Speaker:

of, do you know like of the people that have become pub clubbers, what they're spending on average?

Speaker:

Like is there anyone that's signing up and they just never, I.

Speaker:

We, yeah, we absolutely do.

Speaker:

Yeah.

Speaker:

We have numbers on, it's, it's

Speaker:

sort of bimodal people that, that are drunk and they buy a pub club membership and they come back once, if ever once a

Speaker:

year.

Speaker:

Yeah.

Speaker:

Those, and

Speaker:

that happens a little bit, but yeah.

Speaker:

Maybe like five times.

Speaker:

Yeah.

Speaker:

Three or four times a year.

Speaker:

Maybe it's trimodal.

Speaker:

Yeah.

but we, we figured out, like, it's kind of a double edged sword because we are a business that we.

Speaker:

you know, without, without margin, you have no mission.

Speaker:

And so, you know, we do have to make a profit in order to create the space that we wanna create.

Speaker:

However, we also want to create a space to where we're your third space.

Speaker:

So you, you come in two or three times a week after work, you have your one pint, and then you go home.

Speaker:

Like, we don't need you to stay and buy 800 pints.

Speaker:

Well, I mean, 800 is a bad number, but say five.

Speaker:

don't think you could drive after, right.

Speaker:

800 is too

Speaker:

much.

Speaker:

But let's say you, you know, you come and you have four.

Speaker:

Well, honestly, that might not be too, that might be too many.

Speaker:

You know?

Speaker:

Why don't you just come and have two and then you know, you go on your way home and you've spent your hour, but you do that two or three times a week and we become your third space, your kind of de-stressing space.

Speaker:

You're just your third space and then you go home and you go about your day.

Speaker:

There's

a lot of people here that do that a lot.

Speaker:

Absolute lot of people that do

Speaker:

Speaker:

And that's the group that we're trying to help.

Speaker:

Incentivize in a way to create the habit of us becoming your third space.

Speaker:

are in the pub club?

Oh, I, I think

100 is our, is our goal.

We're hovering maybe just below that.

We kind of go up and down around that because there are

pub clubbers.

Like I come here on certain days, but if for whatever reason I come in on a different day, I'll meet regulars that I don't know.

Yeah.

Yep.

Speaker:

Which is weird.

Because it's like your dad has a family in another town.

Speaker:

Yeah, yeah, yeah, yeah.

We have so many

Yeah, we definitely cover the cost of the liquid.

But in addition, there's something about like, so we've got that, that inner core group.

an, like, they just create an atmosphere where you know that they all know each other.

Them know who you are, they immediately know you and you were drawn into the group.

point at which they become family.

I don't mean like in the hug sort of sense, but the, the family that says what you're doing wrong sort of sense.

They're always telling us how we can do it better and how we're doing it wrong.

And I was like, what's wrong with you?

What, what, what do you mean?

What do you mean you lost your sheet?

You lost the last, he keeps diligent data.

Now granted, the, the ingredients always have to cha or the recipe always has to change based on the real time data of the alphas, of the hops, the grain bill, all of the different chemicals associated math, water analysis, all of that.

So, alright, we were gonna start this by just talking about our, like our top 10 sellers and Yeah.

And give a narrative behind all that.

Speaker:

Well, one of the things, one of the other things that we have noticed is we have a flight button.

Speaker:

Oh yeah.

Speaker:

And so, Joel, can you speak to the flight button?

Speaker:

The flight button gets used a lot on Saturdays,

Speaker:

Doesn't it though?

Speaker:

Oh my goodness.

Speaker:

Yeah.

Speaker:

I, I put it on our top seller just 'cause I wanna see how flights do.

Speaker:

Oh, my word Saturday is Flight City.

Speaker:

Yep.

Speaker:

Mm-hmm.

And I love flights because usually this is the chance for me to talk to people about beer more than

Who buys flights?

Speaker:

May I ask.

People that buy flights are people that are coming into the brewery for one of the first time,

First timers.

Speaker:

They are people who are maybe traveling from out of town.

Speaker:

They've heard good things.

Speaker:

We've had a few people that have listened to the podcast.

I love pouring flights.

'cause it gives me a chance to tell four stories.

Oh my gosh, that's so great.

He just pours 547 four times.

It's, this is a 547 on the right.

And he, and he tells this is a 5 47 in the middle.

A fake mustache he wears and then a hat.

No, but it, it, it's, you know, 'cause they'll want like a variety of things.

Yeah.

And sometimes they'll give me a, they'll say, you know, beer tender's choice.

Speaker:

And it's, it's, oh, that must be hard for you.

No, it's not.

Speaker:

Ponder that one.

It's that one, I've got a, I've got a a, basically what they call that in downstairs amongst my fellow beer tenders is the requiem.

Yeah.

That, that flight is called the requi 5 47 is one of them.

Speaker:

So we can

keep track of first timers based on the number of flights that are chosen.

Speaker:

'cause I don't think I've ever seen a regular buy a flight.

Speaker:

No, no.

Speaker:

Regulars have had the whole thing.

Speaker:

I haven't been done it in a while.

Speaker:

Yep.

Speaker:

I, I wouldn't pour you a flight

Speaker:

Well, of 5 47 maybe.

Speaker:

Right?

Speaker:

So anyway, so that's one way that we kinda keep track of like, okay, so it, so what do you do with that information?

Speaker:

So you give this information about, all right, Saturdays we're gonna have more newcomers.

Speaker:

So like the first time folks coming in and in, I don't know, like we have particular staff on Saturdays.

Speaker:

We normally try and double staff on Saturdays.

Speaker:

And we just know there's gonna be a different crowd, I guess from...

Speaker:

12 to two on Saturday when we first opened.

Speaker:

It's just a totally different vibe.

Speaker:

Very much so.

Speaker:

Then the, say the Wednesday, this is crowd,

Speaker:

This is a chance for you to meet new people Yep.

Speaker:

And hook people.

Speaker:

And, you know, I, I think of the story when Denny first came in.

Speaker:

Yes!

Speaker:

Denny's is such a good friend of mine.

Speaker:

A good friend of the show is a friend of Mc Fleshman.

Speaker:

that, that was just like a landmark moment for, mm-hmm.

Speaker:

For, I think for both of us,

Speaker:

We can do an entire, have we invited Denny to the podcast yet?

We need to get Denny on the show.

That was a serendipitous moment, by the way.

It was, but when he came in, it was just an opportunity.

'cause Saturdays are between 12 and two are never, it's never busy so it gives me more of, because I'm usually the 12 person on Saturday, it gives me a chance to kind of.

be really personable with people and well, and just really have a good time talking to people.

And we have a sense meeting people.

Speaker:

That's my favorite part of working here is meeting people.

And when you're good at that.

Speaker:

I like meeting people.

And, and then it, it also for them, and this is coming back to the graphs and, and nerd, nerd stuff, all the graphs, this gives me a chance too, to introduce them to our beer through flights.

Yeah, so we sell a ton of flights before three on Saturday.

Speaker:

A flight after three is weird.

Speaker:

Yeah.

Speaker:

And our flights, I should say, I'm looking at it now.

Speaker:

It's the...

Speaker:

Well, I, I just sent over the most recent analysis.

Speaker:

So is it, oh,

Speaker:

There's new analysis in the last five minutes.

Speaker:

Flights are actually, they're, they're a little bit lower on that list and, and the reason that flights look like they're really high before you, you run the analysis is because Saturdays

Speaker:

Right.

Speaker:

It's just that one day, one particular day just overweights all of the analysis.

Speaker:

Yeah,

yeah.
